A red wine ganache made from Salzberg Beerenauslese by Gernot Heinrich, one of Austria’s most renowned vintners, at his magical vineyard. The Salzberg Beerenauslese is a Blaufränkisch and Zweigelt cuvee* from handpicked organic grapes, grown at a prime location, processed through spontaneous fermentation and aged in an oak barrel, which produces a very fruity wine that makes a very happy partner to a chocolate dessert. We like happy couples, so we pour it into a dark chocolate ganache and cover it in a classic dark chocolate with 70% cocoa solids.
