Zotter’s favorite creation: wood chocolate without the chippings! Domestic timber made of chocolate – inspired by winemaking in general and barrique barrels in particular. Traditionally, these barrels are burnt slightly, producing a layer called a “toast”, which is responsible for all those fine vanilla and wooden flavor notes.
For the firewood ganache, Zotter toasted pieces of spruce, larch and pine wood, which are then caramelized in the oven and steeped in sugarcane schnapps, lending them their fine wood and vanilla aroma. The resulting homemade brandy is combined with milk chocolate, caramel chocolate and a little honey, resulting in an intense cream tasting of woody liqueur, and then covered in dark chocolate with a 70% cocoa content.
